Homeschool Wiggles

WIGGLES  
Spring has sprung and so have the girls' yearnings to put away the books and be active outside!  I, too, am hearing the little voice calling us outside to play!  Of course, we  have responsibilities, which I am diligent about fulfilling, within reason.  Unexpectedly, I ran across this fitness ball at Home Goods. Thinking it would inspire stretching and the beginning of a new exercise regimen, I purchased it!  Little did I know that it would help rid those wiggles right out of my girls! I am happy! My girls are happy. Money well spent! 
Between studying they roll, bounce, race, fall, giggle, jump...
then, they resume their studies!

I found the pink ball in brand new condition at a thrift store for $3.00!!!  
How is that for a deal?!

Cooking Class



Nana's Comfort Kale Soup

Nana and Papa came for a visit!  Nana taught the girls how to make a delicious, healthy soup.  We call it Nana's Comfort Soup, as it makes us feel perfectly healthy and brings back the fun memories of Nana's cooking class!  It is really simple!  The girls can make it themselves!  No need for me to prepare dinner tonight!!!  Thank you, Mom!  


The ingredients are few:  
quinoa, garbanzo beans, white beans, Italian stewed tomatoes, 
vegetable cubes or broth, & kale
No worries about cooks in the kitchen opening cans with this 
KUHN RIKON, made in Switzerland, can opener.

The blades are not exposed!  It is one of my favorite, kitchen must haves!

Add the following to the soup pot:
Rinse well with cold water and drain 1 cup quinoa, 1 can garbanzo beans*, and 1 can white beans.  Add 1 can stewed Italian tomatoes (chop/cut them with kitchen shears while still in the can - quick and easy), 4 vegetable cubes (or substitutes broth of your choice), and 8 -10 cups water.

*I prefer soaking and cooking up my own beans, 
but the results are delicious if you use canned. 

RAPUNZEL VEGAN VEGETABLE BOUILLON 
is what I usually use.  You can  buy it at Whole Foods.

Bring all the above to a boil, 
then lower to a simmer until quinoa is soft (about 20 minutes).  
Add 3 cups (or more) Kale (ripped into small pieces). Simmer for another 5 minutes.
